Harvesting is the process of gathering crops off the fields.In Western Canada, the annual wheat harvest starts in late August or early September and farmers must balance readiness of the wheat versus the time before the first hard frost in the fall.
In the era before mechanization the difficulty of providing for the increased volume of labour needed for the harvest was long been a concern. In many agricultural areas school holidays were set to allow the children to work on their parent's farms. In Canada immigration was timed to have most new arrivals arrive in the fall. Most dramatic were the harvest excursions which saw thousands of labourers voyage to Western Canada each year. The development of the combine harvester that could bring in many crops mechanically solved many of these problems. Even today some high labour crops, like fruits see significant labour shortages. Today it is not uncommon for the farms of southern Ontario to import labour from Mexico and other parts of Latin America.
