A dilatant material is one which is liquid or semi-liquid when standing but solidifies quickly when subjected to vibratory, sideways forces like shaking. It is not common; the opposite property, called thixotropy, is more usual.The most common example of a dilatant material is Silly Putty, a novelty putty sold as a toy, although the effect is not greatly noticeable. The dilatant effect can be seen far more readily with a mixture of corn starch and water, which acts in counter-intuitive ways when struck or thrown against a surface.
One other common substances that exhibit this property is ketchup. For ketchup, most people know that the best way to get ketchup out of a bottle is to let it flow out under its own weight; shaking the bottle usually does not release very much.
