Crema (Italian, "cream") is a key component in the flavor of espresso with the appearance of a golden foam on the surface of the coffee. It is composed of oils, proteins and sugars (although this description does not do justice to the flavor prized by coffee lovers). The crema has elements of both emulsion and colloid.
